Zucchini Rolls Survive the "Run" Test :)
Since I must eat Gluten-free I often have to make & take my own food when I go somewhere including on hikes. Recently I made several rolls to visit the Rio near Aveiro. Not only did the food need to sit in the trunk of my friend's car for a few hours while we explored nature but... as is usual for me, I had to run to catch the train to meet my friends. With the rolls in my backpack as I was running to São Bento I was a bit worried, but since it's my own food I can eat it dishelveled. However, to my surprise the rolls looked little worse-for-wear when I opened the container... and then at lunchtime everyone had some. Those are the rolls that ran (and then sat) in the picture above.
So this food is almost the perfect food. Not only gluten-free and healthful, but also good for fancy dinners and road-side snacks, and of course great for parties. It can be a great to-go lunch or a refreshing pick-me-up. And hydrating too. Consider ordering some rolls (and pate and crackers) for your next hike, or soirée.
